In her book, Fitter, Happier, Healthier: The Ultimate 4 Week Body Transformation Plan, Kate reveals a food she avoids.”One thing I rarely eat is sandwiches…”I never feel like there’s any goodness in them. The only ones I do have sometimes are the Christmas sandwiches with turkey, stuffing and cranberry. I may have one, once a year as a festive treat, but that’s my lot,” she said.

Being a mother and stepmother, Kate maintains that there is always some not-so-healthy food around. “Leftovers are tempting. I’d used to have my dinner and then mindlessly pick at whatever the kids had left as well…” she says in her book. “Now if the kids leave food on their plates, I’ll put anything salvageable straight in the fridge then I’ll throw the rest away immediately so I’m not tempted to pick.”

“There are often naughty snacks in the house for the kids but I keep them in a high cupboard out of reach of both the kids and me…” she wrote. “If I have a sweet craving, I’ve got to get out a pair of mini steps and climb up to get them down. As soon as I go to get the steps I think ‘Why am I doing this?’ and it stops me.”

Kate starts the day with a veggie smoothie. She blends up fruits and veggies for a nutritious meal. It consists of spinach, kale, celery, and frozen berries mixed with water and ice.

Kate also eats a healthy and “boring” dinner, which usually consists of fish. “I really don’t like greens so I chop them up and mix them in with my rice so it doesn’t feel so difficult eating them,” she writes.

Kate is also a fan of meal delivery services. She discovered HelloFresh after welcoming her son, and claims it has been a game changer. “Dinner done, Courtesy of @hellofreshuk. We’ve been using Hello Fresh for the last few months and it has made our lives and meals so much easier, especially with a new baby!”
