Paleta loves making her own almond and coconut milk. “Almonds are a good source of vitamin E, which is an important antioxidant helping to maintain healthy skin and eyes, as well as supporting the immune system,” says registered nutritionist Nicola Shubrook. “Some commercial brands are fortified with additional vitamins, including vitamin D, which is needed to help regulate calcium in the body. Vitamin B12 is naturally found in animal-derived foods so most fortified plant ‘milks’ have added vitamin B12, which is important for keeping the nervous system healthy.”
Paleta enjoys chocolate as an occasional treat. “Having a healthy relationship with all foods is important for your mind and your body,” says Johns Hopkins Health. “But beginning or creating a balanced relationship with dark chocolate, in particular, may have a significantly positive impact on your overall health. Dark chocolate contains powerful antioxidants. Among the most beneficial is a flavonol called epicatechin. Flavonols are compounds found in plants that fight inflammation and protect against cell damage caused by free radicals.”
Paleta loves raw honey. “Did you know it’s so magical that it’s the only food that never goes to waste,” she says. “Full of properties and delicious.. there are many varieties and it is healing, therapeutic and nutritious.”
Paleta incorporates regular meditation sessions into her wellness routine. Meditation is a highly effective method of stress relief, which impacts overall health. “Every chronic illness is intimately related to stress,” says James S. Gordon, a psychiatrist, the founder and director of The Center for Mind-Body Medicine, in Washington, D.C., and author of Transforming Trauma: The Path to Hope and Healing. “If you can reduce the stress, you can make a difference — sometimes a major difference, sometimes a minor difference, but almost always a difference — in any chronic illness or disease.”
Paleta loves incorporating mamey sapote fruit into healthy dishes. “The incredible blend of nutrients within this fruit makes it very important and beneficial for human health,” says John Staughton, BASc, BFA. “The profile of mamey sapote includes vitamins B, C, and E, as well as potassium, manganese, and dietary fiber, among other antioxidants and trace minerals that serve our bodies in many ways.”
