You are what you eat, Nicole believes. Therefore, she keeps herself fueled with healthy food that she enjoys eating. “For breakfast I love eggs and toast and smoked salmon or bacon, or porridge. For lunch I like maybe some soup or some sushi. For dinner, anything from pasta to rice, and meats and veggies, to sushi. When I’m going to indulge, I love pasta, pizza, I love Mexican with lots of cheese. I love French fries, or crisps – salt and vinegar crisps. In terms of snacks: almonds, coconut water, bits of coconut, baby carrots,” she told Women’s Health.
Nicole stresses the importance of cheating every once and a while. “Don’t deprive yourself of anything because eventually you’ll crave it and then you might binge on it. Everything in moderation,” she told Women’s Health UK.
Nicole, who has always been open about her mental health struggles, has found ways of treating it. One of them? Exercise. “I travel so much it’s so important for me to sweat it out. It’s not only for physical being, but mostly for my mental well-being. It keeps me centered, focused, strong and helps me get in the right frame of mind for my work ahead. Preparation is key. Prepare yourself so when the opportunity comes, you are ready!” she wrote on Instagram.
