Kousoulou loves carbs so much she launched a campaign called Powered By Bread. “I’ve never cut out carbs in my life, that’s why this bread campaign is so good,” she tells Closer UK. “Even before I learned about it I did think I needed to cut out carbs – so that is why I decided to take part in this campaign. Now I have learned about it, it just makes sense. It’s one of those things, you can’t cut out carbs.”

Kousoulou was determined to take her time “bouncing back” after giving birth to son Brody. “Slowly starting to feel like myself again,” she captioned an Instagram post. “Just before this holiday I started watching what I ate and went on a calorie deficit because I decided I wanted to, and I decided I was ready. And I’m proud of myself for doing it for me. Brody is 15 months and it’s now my time. I still have some way to go but I have my goal. Mummas please don’t feel pressure, please do things when YOU want to. Everyone feels different, don’t let anyone pressure you. It’s enough pressure being a mum; we don’t need no extra!”

Kousoulou never starts the day without a healthy breakfast—her favorite is scrambled eggs on wholewheat toast. “Studies have found that although people who skip breakfast eat slightly fewer calories during the day, they tend to have higher body mass index, or BMI,” says clinical dietitian Christy C. Tangney, PhD. “Much of the research just makes good common sense. If you start with a healthy, satisfying meal in the morning you’re less apt to nibble on less nutritious things during the day, which we often do out of hunger — you grab the first or easiest thing in front of you.”

Kousoulou enjoys chicken salad with grilled halloumi cheese for lunch. “Halloumi, like other dairy foods, is rich in calcium, a mineral we need for muscle and nerve function as well as strong healthy bones and teeth,” says registered nutritionist Nicola Shubrook. “A portion (80g) supplies a significant contribution towards your daily calcium needs, something which is of importance for all life-stages.”

 

Kousoulou enjoys drinking at least one green juice and protein shake a day. “It is better to eat than to drink veggies and fruits,” says Dr. David Katz, director of the Yale University Prevention Research Center. “But it is better to drink them than not to have them at all.”
